4th graders made a delicious fresh salsa yesterday using cucumbers and tomatoes grown in our very own outdoor garden!

Here's the recipe:

2 C finely chopped seeded peeled cucumber

1/2 C finely chopped seeded tomato

1/4 C chopped red onion

2 Tbsp minced fresh parsley

1 jalapeno pepper, seeded chopped

4 1/2 tsp minced fresh cilantro

1 garlic clove minced

1/4 C sour cream

1 1/2 tsp lemon juice

1 1/2 tsp lime juice

1/4 tsp ground cumin

1/4 tsp seasoned salt

In a small bowl, combine the first 7 ingredients. In another bowl, combine the remaining ingredients. Pour over cucumber mixture; toss gently to coat. Enjoy!

K5 took advantage of the beautiful weather and took their learning outside to the Outdoor Classroom. What a way to appreciate God's goodness!
